Paul Prudhomme (of New Orleans) died Thursday, October 8th aged 75. He was very heavy and often used a motorised chair to get around.

He was the very famous Cajun chef who popuarised "blackened red fish" and other spicy Louisiana cuisine.
His restaurant was the famous "K-Paul's Louisiana Kitchen" on Chartres Street in the French Quarter. There was always a line-up outside so I never got in there!

In the photo we were performing at the King Edward hotel in Toronto, providing some new Orleans musical flavour for his cookery seminar. The year was 1995.
